
Those who know me well know that I am not very passionate about cooking. I prepare meals because I have to NOT because I want to. I am, however, very passionate about healthy eating. This passion began when I became pregnant with my first child and has stuck with me ever since! Now – that doesn’t mean that we don’t splurge from time to time – we love ice cream and cookies around here – but we also enjoy having healthy snack options in the house as well. With that in mind, I wanted to share one of our ‘go-to’ healthy snacks! If ever there was a treat that was equal parts delicious and healthy it would be these Paleo Snickerdoodle Cookie Bites.

I found this amazing little cookbook entitled Super Paleo Snacks a few years ago and it has really served our family well. It is packed with a ton of really good healthy recipes but theses little Snickerdoodle Cookie bites are a ‘must’ for our family. My kids love to snack on them during the day and they are really easy to pop into a lunchbox for school! These Snickerdoodle Cookie bites are a healthy snack option that is equal parts sweet treat and quick energy! The best part, the kids love to make them!

PALEO SNICKERDOODLE COOKIE BITES
RECIPE FROM SUPER PALEO SNACKS

Ingredients:
1 cup almond flour
3/4 cup (plus 4 teaspoons) coconut palm sugar, divided
1/2 cup almond butter
1/2 cup grass-fed butter
1/4 cup coconut flour
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Handful dark chocolate chips (optional)
11/2 teaspoon cinnamon
HOW TO MAKE THEM

- In a nice large bowl go ahead and mix together the first 8 ingredients: almond flour, 3/4 coconut palm sugar, almond butter, butter, coconut flour, vanilla, salt, and chocolate chips (optional).
- Using your hands just roll them into nice round balls.
- In a smaller bowl, mix together the rest of the coconut palm sugar (4 teaspoons) and the cinnamon. I use a small whisk to blend these two ingredients together really well.
- Take each dough ball and roll it around in the cinnamon/coconut sugar mixture until it is totally covered.
YIELD: 20-25 bites

QUICK TIPS
- I use these pyrex bowls for mixing.
- I use these pyrex dishes for storage.
- Store these treats in the fridge for up to 2 weeks.

You may be wondering why this treat is a healthy option. It’s because these little guys are gluten free and also free of processed sugar. Now, they have a ‘texture’ to them that is a bit different than regular flour but we don’t mind it at all. The fact that they are free of processed ingredients is the trade off and that is the premise of a Paleo diet. While our family doesn’t always stick to this type of eating, these Paleo Snickerdoodle Cookie Bites sure do make ya feel like you are doing something good for your body! I hope you enjoy them!

Do you know if I could use all purpose flour and regular butter? I am allergic to tree nuts.
