As we embark on this new year, I am sure that there are many of you – me included – who are planning to make some changes! I am choosing to call these changes ‘new year priorities’ rather than ‘new year resolutions’ because I like the idea of identifying several things that need to be moved to the forefront of my list of priorities. One of those priorities is continuing to improve upon the process of respecting my body and keeping it healthy and strong! Eating clean and nutrient dense foods is one of the main ways that I do that.
I am excited to continue my ‘healthy eating’ journey and I bet there are a few of you who are excited to that as well! While I love eating foods that taste amazing like cake and fries and candy, I do love it when I get inspired to really look at food as a means of energizing my body from the inside out. And, it is always such fun to introduce a new healthy food option into my daily meal planning – especially when it tates great!
With that in mind, I am excited to share my strawberry almond butter smoothie recipe with you all. A few years ago, our family began eating a diet high in healthy fats and lower in sugar. After searching for a while for a smoothie that was tasty and filling and low in sugar, I discovered this strawberry almond butter smoothie online. I am so excited to share it with you all here.
This smoothie is not only healthy but it is also quick and easy! It calls for a few simple ingredients and literally takes just a few minutes to make !
Ingredients:
- 1 Cup Strawberries
- 1 Cup unsweetened almond milk
- 2 Tablespoons of organic almond butter
- 1-2 Teaspoons of swerve sweetener
- Slash of vanilla – I usually use about two teaspoons
Process:
You simply add in all of the ingredients into a good blender and blend it until it is smooth. You may need to use a spoon to move the almond butter around a bit to ensure that it is well blended – but that is it!
Tips:
- This smoothie is filling and sometimes I can not eat the entire serving! When this happens, I simply pour the leftovers into a cup and stick it in the freezer for the next day. Also, during the summer, I pour the extra smoothie into popsicle molds – for the kids!
- During the winter months, I like to use frozen strawberries. However, once strawberries are in season, usually around mid April here in Georgia, I like to use fresh strawberries. When I use fresh strawberries I also usually add in a few ice cubes for texture!
- You could add in any additional fruit to spice it up! I usually add in blackberries or blueberries.
- You can substitute coconut milk for almond milk. I like either one
- You can also add as much liquid as you want. Sometimes my kids prefer this a little ‘thinner’ and all I do is simply add more almond milk!
