With Halloween just a few short days away, I thought it would be a good idea to whip up a special snack for my kiddos! We love to celebrate this fun time and these little cheesecake ghosts are the perfect little bite size treat!
As you may know, our family tries to eat a low sugar/carb diet. We also try to eat a fair amount of healthy fats. Sometimes it can be hard to satisfy a sweet tooth around here, especially around Halloween. These charming bite size ghosts are perfect for us because they packs a lot of punch with out a lot of excess sugar!
This recipe is one that I found a few years ago online. I was skeptical the first time I made them – but they really do taste great. I did add in a little protein powder in order to bump up the nutrition a bit – and our family really enjoys them!
These treats only need a few simple ingredients and are very easy to make.
Spooky Ghost Bites
Ingredients
- 1 Cup Almond Flour
- 2 TBSP Monk Fruit Sweetener
- 1/2 tsp Salt
- 4 TBSP Butter
Cheesecake Topping
- 8 oz Softened Cream Cheese
- 3/4 Cup Heavy Whipping Cream
- 1/4 Cup Monk Fruit Sweetener
- 1/2 Scoop Protein Powder
- 2 1/2 tsp Vanilla Extract
- No Sugar Added Lilly's Chocolate Chips
Instructions
- Mix the Almond Flour, Monk Fruit, Salt, and Butter in a mixing bowl. Take 1 spoonful of mixture and press into the bottom of a mini muffin pan. Use a fingers to push the mixture tight into the pan. Place in the fridge and let set for 30 minutes.
- In a large bowl, mix softened Cream Cheese, Monk Fruit, Protein Powder, and Vanilla Extract until fluffy.
- Using a mixer, whip the Heavy Whipping Cream on high until stiff peaks form. Fold into cream cheese mixture.
- Remove crusts from fridge and take them out of the muffin pan. Remove mini cupcake liners if used. Fill a pipping bag with the cream cheese mixture and add a 'ghost' to the top of each crust.

My children (and my husband) love these treats. The little ghosts are not only festive but are also so very easy to make! If you are looking for a low sugar alternative then I highly recommend these cheesecake ghosts.
